Adding a Tax Rate
Head to More → Settings → Local Settings → Tax Rates
Select +Add new tax rate
Complete the relevant details to create a tax rate
When creating a new invoice, your newly created Tax Rate can be selected:

You need to have stated that you are tax registered within Invoice Settings

Editing a Tax Rate
You can edit a pre-existing tax rate by selecting the action cog → edit:
Archiving a Tax Rate
You can archive a tax rate by ticking the line item and selecting archive:
